Jammu and Kashmir Food Festival at Radisson Blu, Kaushambi
Jammu and Kashmir has always been the most talked about state in India. From the beautiful mountains to the holy shrines and the picturesque lake, this place has all the reasons to be known as a heaven on earth. What makes it more special is the food offered here which has a perfect taste and belonging essential of it’s own. When we were invited for a food tasting session of the Jammu and Kashmir food festival at Radisson Blu, Kaushambi we knew we were in for something exceptionally good. With chef Gulzar flown in especially from Kashmir to look after this festival we could vouch for the authenticity of the taste.
Evenings at the Radisson Blu, Kaushambi are always soothing and spent well amidst good food and ambience. With Kama being the in-house restaurant for a-la-carte and food festivals, the service and one-to-one sessions with the chef keep you happy. Executive Chef Vivek Kapoor loves to interact and share the amount of hard work and preparations it takes to bring a perfect dish to the table. He also shares the reason for particular taste or texture of a dish.
The evening started with their customary freshness session followed by the Kashmiri Kahwa. The Kahwa was rich in aroma and flavors setting the tone right for a soothing evening. We had Tabak Maaz, Chicken Kanti, Pan Fried Fish and Lamb Seekh Kebabs for the starters. The Tabak Maaz was lamb ribs marinated in milk and then cooked in spices. One of the most flavorsome variety of lamb we had.
The Chicken Kanti was mild in taste while the Pan Fried Fish was soft and melting in the mouth with perfect spices. The highlight of the starters were the lamb seekh kebabs which was spicy, tender and juicy. It was so good that we asked for the second serving, twice!
For main course from the Kashmiri Wazwan, we tried the Wazah Murg, Gustaba, Methi Maaz and Dum Aaloo along with Marchwangan Korma.
